Creamed Corn Cornbread Muffins

I have never made these before, yet I am looking for a specific taste of a "corn" muffin that I had years ago.

SO I will be trying out new "Corn" muffin recipes until I find what I like.

This one is good, yet not what I was looking for. What I was looking for was maybe a bit more cake like.

The texture is this muffin is nice.

I really like adding corn meal to muffins. I always add corn meal to my banana muffins.

Chicken Pot Pie - Supper tonight!

Here it is! This is what we made and ate for supper tonight.

My Modifications:
  • Shredded the frozen butter instead of using cubed butter (mixing it into flour mixture while shredding)
  • Don't have a food processor, so kneaded it slightly and due to shredded butter it was quite simple.

My Modifications:
  • Omitted Celery
  • Added a medium diced potato
  • Added a pinch more celery seed
  • As others indicated in feedback - used 2 Cups chicken broth to cook the vegetables and chicken.
  • For they "gravy" part I put the milk in a separate bowl cold, and mixed the flour and a bit of corn starch to it while cold.  Then added it separately to the onion and butter mixture, then poured all the veggie/chicken with broth mixture into that and simmered until thickened.  (and you can see that in the fry pan above the uncooked pie.)
  • Added 1/2 tsp of garlic powder (with the pepper/salt/celery seed)
  • Added 1/4 tsp of cumin (with the pepper/salt/celery seed)
